Celebrating New Wines

Raise a glass to summer sippin’! Guests are invited to join Fielding Hills on May 12th or 13th from 5:00 pm to 7:00 pm. We will be pouring our three newly released white wines as well as a preview of our yet-to-be-released 2022 Estate Riverbend Rosé.

Featured wines of the evening:

  • 2022 Estate Chenin Blanc
    • Chenin Blanc vines from our Estate Riverview Vineyard produce large clusters that are the perfect balance of sweet and refreshing acidity. The Chenin Blanc was fermented and aged in a combination Nomblot concrete egg-shaped tank (75%) and stainless steel (25%). The resulting wine is bright yellow-green in color with a delicate balance of fruit intensity and palate weight. The flavors range from notes of green apple to melon and golden kiwi, finishing with a round minerality.
  •  2021 Estate Chardonnay
    • The 2021 Chardonnay was fermented and aged in a Nomblot concrete egg-shaped tank (25%), a combination of new and used French Oak barrels (40%) and stainless steel (35%). We bottled the wine in August of 2022. The wine has initial aromas of peach and lemon zest with a hint of jack fruit and jasmine. It is medium bodied and flavors are balanced with notes of crème brulee, wet flint, and toasted butter. The finish lingers with notes of citrus peel.
  • 2021 Estate Roussanne
    • Our Roussanne was harvested on September 9th, 2021 and whole-cluster pressed, then fermented and aged in a Nomblot concrete egg-shaped tank (23%), new French Oak barrels (29%) and stainless steel (48%). The wine has bright aromas of lemon grass and toasted brioche with hints of chamomile and green mango. It is a full-bodied wine, flush with flavors of white peach, meyer lemon, and Nasturtium (an edible herbacous flowering plant) concluding with a round finish.

More about Chef Austin

  • Chef Austin was born and raised here in Chelan, Washington. After High School he fell in love with food, wine, spirits, and everything hospitality. He set out to learn the ins and out of the hospitality and the restaurant industry. Working in San Diego, Seattle, and spending some time in Spain and France, eating, drinking, and learning. After 11 years he’s back to his hometown in Chelan to raise a family and share with his community all he’s learned. Upon moving back, he started the culinary program for Rocky Pond Winery, where he was for 3 years until starting his own Private Chef business. Now he travels around the valley doing in home, private dinners and partnering with wineries for special events and winemakers dinners. Having fond memories of his grandparents garden, and family  fruit trees, his food embraces the abundance of beautiful produce in our valley. From homegrown veggies, to the hidden foraged finds, Chef Austin uses only the freshest ingredients to create his ever changing, all from scratch, menu.
This event is a great time for our HWY 243 wine club membership to pick up their newly release allocations and experience the wines alongside the winemaking team.
