2007 Syrah

Blend: 92% Syrah, 4% Merlot, 4% Cabernet Sauvignon

Components: Alcohol- 15.3%; pH- 3.52; T.A.- .65

Appellation: Wahluke Slope

Vineyard: Riverbend Vineyard

Winemaker:
Mike Wade, Co-owner Fielding Hills Winery

Harvest: October 2007 early morning hand harvested into small lugs

Vinification: Harvest lugs are individually inspected, with grapes clusters then stemmed and crushed directly into small "one-ton" fermentors. The must is then allowed to settle for 24 hours when a combination of Prise de Mousse & Pasteur Red yeast was added. Twice each day the must is checked and punched down. When nearly dry, the free run wine is transferred directly into oak barrels. Bottled unfined and unfiltered resulting in superb color, clarity, and flavor.

Aging: 19 months in a combination of American and French oak barrels; 72% new

Production: 184 cases
Bottling date: May 9, 2009
Release date: September 1, 2009

Tasting Notes:
"Four percent cabernet and 4 percent merlot in this fruit-powered syrah. Spicy and annotated with scents of game, anise, smoke, and moist earth, the black and purple fruits dominate. It’s still young, a bit oaky, and relatively high in alcohol."
(P. Greggut)

"Cherry cherry cherry. Huge sweet black cherry is accented by violet perfume in the nose. This wine is lush - the flavors are mouth-coating, adding milk chocolate, vanilla, and red fruit to the black cherry mix. Ginseng, candied ginger, and baking spices jump onto the finish. Adrienne found crème de cassis, pomegranate, and honey glazed smoked ham in the finish as well."
(J. Y. Avalon Wine)
